This is a lean and tender joint which has been cut from the loin and then carefully boned and hand-rolled by butchers to ensure the fat remains inside the joint. This means the fat melts when roasted and keeps the meat tender and full of flavour. Rolled Sirloin is sometimes referred to as ‘The King’ of roasting joints because it is lean but has just the right amount of fat to baste while it cooks.
