Prime rump is taken from the centre rump section in the hindquarter of a cow. It is a very full-flavoured piece of meat that is very versatile when roasted, braised or casseroled, stir-fried or pan-fried. It is very lean and full of flavour making it ideal for simple frying. To ensure it is done to your preference, cook a 2cm thick steam for 2.5 minutes each side for Rare, 3 – 3.5 mins for Medium Rare, 4 mins for Medium and 6 minutes per side for Well Done. Leave to rest for a couple of minutes before serving.
