Duck meat is one of the most nutritious forms of protein with high levels of B vitamins and minerals such as zinc, potassium, magnesium and iron.

Rich and full of flavour, it has less meat than chicken and turkey weight for weight but, because its flavour is strong, a little goes a long way.

Because of the meat’s richness, many recipes for duck include something sharp or fruity such as oranges, raspberries, cherries and cranberries to balance out the flavours.

Like goose, the fat on a duck sits under the skin and so can be cooked out and then stored for use with other cooking, such as roast potatoes or general frying.
