Succulent meat with crisp, crunchy crackling – pork is perfect for roasting and can easily take pride of place at the dinner table when presented in all its glory. If you want good crackling, take the joint out of any packaging and dry thoroughly before cooking. Take large joints out of the fridge one hour before cooking to allow them to come to room temperature and cook more evenly. For a crackling joint, dry the rind again and rub one tablespoon of sea salt into the rind 30 minutes before cooking.
