The succulence and flavour of these pork and pepper sausages offers a taste combination not to be found anywhere else. Lean but with just the right amount of fat to keep the meat moist, they are ideal on their own or as the main ingredient in a colourful stew. The flavours are strong enough to withstand the addition of some red wine or beer to help make the gravy and give a sweetness to counteract any sharpness from the alcohol. Similarly, a fruit-based sauce, such as cranberry or redcurrant would also work well with these sausages.
