Lamb Loin Chops

Lamb chops have a distinctively rich flavour, and while they’re fancy enough for a dinner party, quick-cooking lamb chops also add variety to weeknight meals. Loin versions are the favourite cut and are delicious sautéed in oil and butter with some garlic and a sprinkle of fresh rosemary or thyme.  Deglaze the pan with white wine or chicken broth and lemon juice with some more body for a heady sauce to balance the richness of the lamb.
