Sausages are undoubtedly one of the nation’s favourite dishes and there are many varieties including this smaller version of the traditional Cumberland. The chipolata is great for an array of recipes, ranging from ‘Toad in the Hole’ where the sausage is partly cooked in a large baking tray before batter mix is added, cooking to a rising perfection as the sausage completes its cooking cycle. Ideal with a few peas and gravy, it is true comfort food for all ages.
