There’s little to beat the rich aroma of a hearty beef stew left to cook until the meat is tender and flavoursome. Diced beef is a wonderful way to start off an easy meal – add a few vegetables, stock and herbs or spices and leave to do its own thing. Alternatively, add curry spices for a rich and spicy Indian dish. The depth of this meat develops when cooked with moisture over a longer period of time producing an impressive, tender, result and rich gravy. Searing or browning the outside of the meat at a fairly high temperature beforehand develops the taste and colour through caramelisation.
