Jamon Serrano, literally mountain ham, is salted, matured and stored in the same way as Iberian ham but comes from a different breed of (white) pig and has a shorter maturation period.

Farmed for its depth of flavour and luscious texture, cut into wafer-thin slices that drape the plate in mouthwatering folds of dusky pink covered lightly with a ribbon of fat.

Delicious with asparagus and melon.
